Giovanni Trovato, Restaurant Manager & Head Sommelier

After many years of experience abroad, in 1990 Giovanni Trovato returns to Colle di Val d’Elsa as a Sommelier, and embarks on the Arnolfo project with his brother Gaetano, a project that will span the next 30 years, with their shared philosophy of hospitality and traditions.

Drinking well doesn’t necessarily mean drinking rare and exclusive vintages, but it means creating a harmonious relationship between food and drink. Just as Gaetano makes customers feel good with his culinary creations, so must I indulge them with my knowledge and experience. I give the customer advice based on their inclinations and personal taste

Giovanni Trovato believes in the powerful synergy between two generations working together, a belief that has always distinguished Arnolfo and will continue to be a cornerstone for the future.

Calogero Milazzo is Maitre d’ at Arnolfo.  After extensive experience both in Italy and abroad, he joined the team at the Arnolfo in 2016 and very quickly became Giovanni’s alter-ego as he embraces the same values of hospitality.

Courtesy, sharing and curiosity are my key considerations regarding hospitality. Kindness that become contagious is essential, and enriches both my own and the customer’s experience
